Champagne Henriot Brut Souverain

Appearance: Very pretty yellow, tiny delicate bubbles creep up from the middle of the glass while larger bubbles cling to the outside of the glass.
Aroma: Light brioche, almond paste, apple danish, roasted apple, fennel bulb, lemon curd, silex minerals.
Palate: Lovely minerality, tart and tangy apple, flint; the bubbles are very exciting, tart green apple and minerality carry through from the front of the palate to a lovely lingering finish.
Pairing: The wine would be great with a rich white fish sautéed in lemon and butter with capers or a parchment paper baked fish with fennel and lemon. Oysters (of course).
We paired the Champagne Henriot in a classic French style: goose liver (which I bought in Italy!), triple cream brie, and a warm baguette plus a salad with apples and pomegranate. The goose liver and the wine work so well together. Both have such a lengthy long finish.

With the triple cream brie, the wine tackles the creaminess of the cheese while the cheese accentuates the fruit in the wine. This simple yet elegant meal was perfect with the wine. The salad works with the brie, and the goose liver works with the brie, and the wine works with everything.
