Domaine wine with 50-year-old vines from a number of vineyards, including north-facing plots underneath Les Lys, north west facing opposite Vaillons and south facing around Troesmes, plus some mineral soils from around Chichée. Intense and driven, you can smell the Kimmeridgian. Great energy and focus. Spice on the finish, precise acidity. Will age for many years. Bottled just before the 2021 harvest.

Vinous

Oyster-shell reduction and a note of lime on the classic Chablis nose. Dense, juicy and firm, boasting excellent definition to its flavors of oyster shell, lime and white flowers. Penetrating but not aggressive in spite of its firm acidity, finishing with excellent subtle length and grip. This terrific village wine is an exceptional value--but make sure you get the Domaine bottling.

Derived from 46 hectares of holdings that average around 45 years old, Fèvre’s 2020 Chablis Village is a rare example of a cuvée that combines quantity and quality. Offering up aromas of white flowers, clear honey, bread dough and fresh pastry, it’s medium-bodied, saline and seamless, with bright acids and a fine-boned, elegant but intensely flavored profile.

A ripe and fresh nose offers up notes of iodine, oyster shell, mineral reduction, pear and plenty of citrus influence. There is fine density to the concentrated and sappy flavors that possess fine volume while delivering very good length and solid depth. Good stuff and worth a look.

Nutty nose, with steely green apple on the palate. Fair density. Classically styled.

"This is really bright and clear with sliced apple, pear and stone. Some chalk, too. It’s linear and tight. Pretty length and freshness. Drink now."

The 2017 Chablis Villages is performing even better than it did 12 months ago, wafting from the glass with a pretty bouquet of white flowers, green apple, crisp Anjou pear, orange zest and oyster shell. On the palate, it's medium to full-bodied, elegantly textural and precise, with good depth and amplitude at the core, racy acids and a penetrating finish. This is a lovely example of the appellation that will offer a wide drinking window.

William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. Drink from next year and for many years.

This white is enticing for the sleek profile and clean flavors of lemon, apple, quince and mineral. Nicely balanced and long, with a stony, citrusy aftertaste.

Seems a bit more appealing and crisp than the sample tasted at chez Goedhuis. But still a bit appley rather than stony. Good acidity. If I saw this on a not-very-good wine list, I'd be happy to order it.
