A reductive, stainless-steel style of Chablis, this gains some weight from the concentration of fruit. It’s succulent and leesy while remaining clean, zesty and fresh, needing bottle time for the components to come together.

William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. Drink from next year and for many years.

Light notes of citrus and cedar, more open and expressive than some. With the rounded texture of that oak-fermented portion determining the overall style though there is no oak flavour. Gentle and creamy but still very fresh on the longish finish.

Seems a bit more appealing and crisp than the sample tasted at chez Goedhuis. But still a bit appley rather than stony. Good acidity. If I saw this on a not-very-good wine list, I'd be happy to order it.

A slightly fresher nose speaks of mineral reduction, apple and soft floral scents. There is a lovely sense of energy to the attractively textured, rich and delicious middle weight flavors that possess much better depth and persistence. One to consider.

Oyster-shell reduction and a note of lime on the classic Chablis nose. Dense, juicy and firm, boasting excellent definition to its flavors of oyster shell, lime and white flowers. Penetrating but not aggressive in spite of its firm acidity, finishing with excellent subtle length and grip. This terrific village wine is an exceptional value--but make sure you get the Domaine bottling.

Domaine Fevre owns just under 47ha designated as AC Chablis. Aged for 10-12 months in stainless steel, with a small proportion matured in aged oak barrels for 4-6 months, this Chablis carries much more weight and concentration, with plenty of firm acidity from the ripe, forward 2018 vintage. On the palate, bright lemon fruit is combined with savoury notes of flint and pebbles. A Chablis which manages to combine both freshness and complexity. Attractive and, relatively, early drinking.

View From the Cellar

The “estate bottling” of Chablis villages from William Fèvre is even a step up from the very lovely Champs Royaux in 2015. The bouquet is deeper and more refined, wafting from the glass in a mélange of lime, green apple, a touch of oyster shell, chalky soil and fruit blossoms. On the palate the wine is pure, full-bodied and very nicely balanced, with a good core, fine focus and impressive length and grip on the vibrant and nascently complex finish. This is really a serious example of AC Chablis this year!
