Chablis Grand Cru Bougros Domaine 2015

View From the Cellar

The vineyard of Bougros can often produce a more forward grand cru, but the 2015 from Domaine William Fèvre has plenty of cut and grip to go along with its beautiful fruit tones. The wine wafts from the glass in a classy mix of golden delicious apples, pears, lemon, a hint of the acacia blossoms to come, chalky minerality and just a whisper of vanillin oak. On the palate the wine is deep, full-bodied and very pure, with a great core, fine mineral drive and a very long, vibrant and racy finish.

A subtle touch of wood sets off the restrained and all but mute nose where about the only identifiable aromas are green fruit and algae so be sure to decant this if you’re going to try a bottle young. Otherwise there is very fine richness to the big-bodied and overtly powerful flavors that deliver stunningly good length and depth. This is mildly rustic but has so many other things going for it that it’s worth considering anyway.

Vinous

Very pale lemon-yellow. Vibrant aromas of white peach, grapefruit, lemon and crushed stone. Bigger and sweeter than the Vaulorent, showing grand cru weight but not quite the same energy or cut as the premier cru. This very backward, saline wine communicates an impression of strong dry extract and citrus thrust. The yield here was at least 40 hectoliters per hectare in 2014, according to Séguier.

Wine Advocate

The 2014 Chablis Grand Cru Bougros, is vinified 60% in used wood where it matured for six months before being transferred to stainless steel. It has a showy, generous bouquet with dewy Granny Smith apple, freshly sliced pear and chalk-scented nose. There is no holding back here. The palate is fresh and crisp, very harmonious, not powerful as such, but displaying admirable precision on the finish. I would agree with Didier Ségieur in that this forms one of the more approachable, less-challenging Grand Crus.

This is a fabulous white wine with dried apple, mango and mineral plus hints of hazelnut. Full body, bright acidity and a long, dry finish. What a white.

Vinous

Very pale green-tinged yellow. Aromas of lemon gelato, soft citrus fruits and spices are lifted by a subtle floral topnote. Suave and thick but weightless. Less expressive by far than the Bougros but more penetrating thanks to solid mineral-driven acidity. Superb tension in the mouth. Very subtle and dry, with the saline, grapefruity finish going on and on. Didier Seguier will bottle the 2014 grand crus in December and January.

Wine Enthusiast

All the Fèvre vines are at the top of
this vineyard, giving very structured, long-lived wines. This is certainly an age-worthy wine, tightly coiled and nervy, with a strong mineral note at its heart. Lemon and quince flavors are caught up in the complex structure.

Decanter

A distinctly toasty nose, still reticent, with lime and apple fruit. Broad and rich, the palate shows ample sucrosity and intensity, lifted by fine acidity with a pungent and saline finish. Nutty and very long, and the wood seems well integrated.

A broad ranging and wonderfully elegant array features notes of spice, green apple, grapefruit, lemon rind and copious Chablis elements. Remarkably for a wine that is gorgeously refined, the medium-bodied and concentrated flavors are even more powerful than those of the Bougros and Valmur, all wrapped in a superbly complex, saline and balanced finish where the citrus character telegraphed by the nose reappears on the explosive finale. There is a bit of wood in evidence but I doubt that it will take very long before it is fully integrated. In sum, this is one to strongly consider.

As it was from
cask last year this remains quite closed but aggressive swirling liberates ripe aromas of sea breeze, pear, lemon rind, oyster
shell and mineral reduction plus an abundance of typical floral scents. The large-scaled flavors are overtly powerful and
impressively concentrated as there is plenty of palate staining dry extract that also buffers the very firm acidity that supports
and shapes the gorgeously precise finish. This explosively long effort possesses exquisite balance and the tightly wound
