This is more aromatically complex still with its broad-ranging nose of floral, pear, citrus peel, apple and tidal pool scents. There is a really lovely sense of underlying tension to the concentrated and sleekly muscular flavors that possess quality depth on the balanced, harmonious and decidedly dry finish. A wine of class and grace.

Vinous

Very pale yellow-green. Restrained, pure aromas of citrus zest, white peach and white pepper. Densely packed and rich but precise too, with nicely integrated acidity and underlying minerality giving this wine good precision for the year. Has the balance to offer early enjoyment but also the inner-mouth tension to age. A round, seamless wine with excellent tasty persistence.

Very pale, bright, green-tinged yellow. Subtle aromas of lemon, white pepper, spices and herbs. Sweet, round and rich, delivering the creaminess of the vintage energized by sound lemony acidity and underlying wet-stone minerality. Finishes with a bit more energy and saline grip than the Montmains.

Yet again the ultra-fresh and strikingly layered white flower nose is packed with typical Chablis aromas that include cool mineral reduction, citrus and oyster shell nuances. The medium weight flavors are almost painfully intense while brimming with minerality on the chiseled finish that is tight to the point of being linear. This terrific effort will require at least 5 to 7 years of cellaring to reveal its full, and considerable, potential. In a word, impressive.

Pale yellow-green. High-pitched aromas of lime leaf, mint, menthol and white pepper. Rich but precise and peppery in the mouth, with lime and spice flavors accented by salt and pepper notes. Very firmly structured premier cru. This started out in 50% oak, none new.

View From the Cellar

The 2015 Vaulorent from William Fèvre is equally superb, offering up a deep, pure and nascently complex bouquet of pear, lime, orange blossoms, chalky minerality, a touch of paraffin and a topnote of dried flowers. On the palate the wine is deep, full-bodied, pure and nicely primary in personality, with a rock solid core, impeccable focus and grip, bright acids and a very long, focused and classy finish. Another stellar bottle in the making!

This is not quite as aromatically elegant as the Montée de Tonnerre but there is every bit as much depth to the green fruit, citrus, quinine and oyster shell suffused nose. There is fine concentration to the powerful, suave and intensely stony flavors that possess superb finishing complexity on the balanced, clean, very dry and energetic finish. As is often the case, this delivers grand cru quality.

2014 Chablis “Vaulorent”: (from a huge 3.63 ha parcel out of only 17 ha and most of it is hard by Les Preuses. Séguier calls this their “baby grand cru” as specific barrels are selected for vine age, concentration and power). Yet again the ultra fresh and strikingly layered white flower nose is packed with typical Chablis aromas that include cool mineral reduction, citrus and oyster shell nuances. The medium weight flavors are almost painfully intense while brimming with minerality on the chiseled and moderately austere finish that is tight to the point of being linear.

The 2014 Chablis 1er Cru Vaulorent, which head winemaker Didier Séguier described as "a baby grand cru," was a little cloudier than the Fourchaume in the glass. It has a complex nose with a touch of grilled almond and dried apricot, well defined but just a little sultry at the moment. The palate is relatively rich on the entry compared to the other Premier Crus and this lends roundness and suppleness in the mouth. It gently builds with great precision, hints of lime and apricot flourishing on the peacock's tail of a finish.
