Like the Les Lys, the nose is dominated by airy and cool floral and white fruit elements that display top notes of citrus and iodine. The medium-bodied flavors are a combination of power and refinement as they too coat the mouth while delivering an abundance of minerality on the impeccably well-balanced finale.

The 2015 Fourchaume from Domaine William Fèvre is flat out delicious, jumping from the glass in a vibrant blend of pear, apple, chalky soil tones, lime blossoms and just a whisper of pastry cream in the upper register. On the palate the wine is deep, full-bodied and generous on the attack, with a fine core, very good focus and grip and very impressive backend mineral drive and lift on the long finish.

The 2014 Chablis 1er Cru Fourchaume is located in Vaulorent, eight parcels that are selected for two different bottlings, the other labeled "Vaulorent" (see separate note). The nose is backward and sultry, clearly not wishing to come out and play like the other Premier Crus. The palate is fresh and mineral on the entry with just a touch of bitter lemon. It is nicely balanced, perhaps not quite as long as the Chablis Vaulorent, but lingers nicely in the mouth.

Vinous

Pale yellow with a green tinge. Rather exotic aromas of ripe peach and lichee. Fat and glyceral in the mouth, in a distinctly tender style and less minerally than most of the other 2014 premier crus here. Very concentrated but this broad, lower-acid wine may be best suited for those who find most Chablis too bracing.

More than half of this lot ferments in stainless steel, the rest in older oak barrels, all of it coming together for ten months in stainless where this wine began to meld into a clean, linear white with tart apple acidity. The structure shows the wine’s finesse, though the flavors are hard to reach for now, tightly drawn around the scent of lees, wheat sheaf and the mineral feel of spring water. This should open after several years of age.
