A reductive, stainless-steel style of Chablis, this gains some weight from the concentration of fruit. It’s succulent and leesy while remaining clean, zesty and fresh, needing bottle time for the components to come together.
Nutty nose, with steely green apple on the palate. Fair density. Classically styled.
Subtle zestiness insinuates itself on the subtle cornmeal notes of this wine's nose. More air reveals fresh green-pear peel. The palate comes in with ripeness and pervasive citrus freshness. Bright and juicy, the wine has gentle but zesty concentration and fresh resonance. -- Anne Krebiehl MW

William Fevre own 46ha of AP Chablis but there was lots of frost damage in 2021 - the yield was just 18hl/ha! Lovely floral notes here, very precise and focussed. This is already appealing although the acidity is certainly evident. Lingering spice notes on the finish. From a tank sample, with bottling due in November. Drink from next year and for many years.
Light notes of citrus and cedar, more open and expressive than some. With the rounded texture of that oak-fermented portion determining the overall style though there is no oak flavour. Gentle and creamy but still very fresh on the longish finish.
The 2021 Chablis Bougros Grand Cru comes from southwest facing parcels (Fèvre has almost half the holdings in the Grand Cru) has a very marine-influenced bouquet with touches of granite and a light smoky note.
Peach, apple and lanolin aromas and flavors are the hallmarks of this white. Vivid and mouthwatering, it leaves a chalky feel on the finish. Best from 2021 through 2028.
The 2021 Chablis Bougros “Côte Bouguerots” Grand Cru, which was cropped at just 17hl/ha this year, has an intriguing bouquet with hints of peach skin and honeysuckle, the precocity of this parcel seeping through as it opens up. The palate is well balanced with a fine bead of acidity, taut and fresh, quite linear with hints of orange pith and even a dab of ginger towards the spicy, energetic finish.
