Chablis Grand Cru Bougros "Côte Bouguerots" Domaine 2013

Fèvre owns 15.39 acres of Bougros, almost half the total cru. They separate out a 5.2-acre parcel on the steepest slope for Clos Bouguerots, using the balance for this grand cru. About 60 percent of the wine ages in older French oak casks (averaging six years of age), which helps point up the savory structure of the wine, reading in pale umami notes of miso. The fruit of the wine is youthfully pale as well, powerful in its delivery of chamomile, dried hay and jasmine scents of white grapes. A mouthwatering young Chablis, this is built to age.

A big wine constructed from chalky rock, this has bee-pollen savor and transparent layers of white-gold grape-skin flavor, allowing the alcohol to feel more like electric energy at the center of this grand cru. As tight and undeveloped as it may be for the moment, it has generous richness and impressive clarity.

A succulent vintage of this grand cru, this has a chalky savor tightening around its generous texture, lending a sense of elasticity and tension. It’s powerful in the middle, ending with a little warmth, which is the only factor that might shorten its drinking window. This should reach its peak in five or six years, and last from there.

More than half of this lot ferments in stainless steel, the rest in older oak barrels, all of it coming together for ten months in stainless where this wine began to meld into a clean, linear white with tart apple acidity. The structure shows the wine’s finesse, though the flavors are hard to reach for now, tightly drawn around the scent of lees, wheat sheaf and the mineral feel of spring water. This should open after several years of age.

Half of this wine ferments in barrels, where it rests on the lees for five or six months before joining the other half, which fermented and aged in stainless steel. Youthfully tight, this wine’s fruit feels constrained into spicy notes of parsnips and lime while it shows some of the alcoholic power of the vintage. It’s potent and needs time for the flavors to open.

Then air brings up the beautiful freshness, layering a red fruit note of strawberries with scents of grain and vanilla. The finish tightens up and lasts, so that it tastes as if you're breathing strawberry cream. Bouchard produces this from nine acres of estate vineyards in Corton.
